Step-by-Step Instructions

1 Put the rice in a bowl and add warm water, covering it by about 10 centimeters. Let it rest for about 30 minutes. Wash the rice under running water a few times and drain to clean off the starch.

2 Melt the butter in a pot. When the oil gets hot, add the pistachios and fry them until they turn golden, then drain the oil and remove them.


4 Add the onion. Add water until the onions become soft and then, let it simmer.

5 Mix by adding the pine nuts, currants, rice and seasoning, then cook for 3 minutes and turn down the heat. Seal the pot lid tightly. Cook the rice for 15 minutes at low heat.

6 Remove the rice from the stove. Remove the lid and cover the pot with some paper towel. Put the lid back on.

7 After letting the rice rest in this way for 20 minutes, stir with a wooden spatula – carefully, so as not to crush the rice. Serve hot.

    120 grams of butter

    40 grams of pine nuts

    240 grams of diced AYTAÇ BEEF SALAMI

    100 grams of finely chopped onions

    24 grams of currants

  • 1/2 teaspoon of ground cinnamon

    1/2 teaspoon of ground cloves

    1/2 teaspoon of crushed cardamom


    Salt and ground black pepper
