1 Put the flour in a kneading bowl. Form a well in the middle and fill it with the water, yogurt, oil, egg and salt, and then knead the dough. Cover it with a moist cloth and leave to rest for an hour.
2 Cut the dough into 2 equal pieces. Knead the dough into plate-size by sprinkling starch on them.
3 Rub melted lukewarm butter on the kneaded dough.
4 Use a roller to thinly spread the dough. Cut the dough in half.
5 Peel and chop the onions for the mix.
6 Sauté them in hot oil in a pan.
7 Add minced meat and fry for 5 minutes while stirring.
8 Coarsely dice the potatoes, add to the mincemeat and cook for 5 minutes.
9 Season with salt, ground black pepper and chopped parsley.
10 Remove from the stove and leave to cool.
11 Dice AYTAÇ - CHICKEN SUJUK.
12 Sauté AYTAÇ - CHICKEN SUJUK in a separate pan, add to the mincemeat mix and stir.
13 Spread the mix on each piece of dough, leaving a 2 centimeter space on the edges.
14 Envelope the other half of the dough and push down on the sides to close firmly.
15 Place the dough on an oiled baking tray.
16 For the egg wash, whisk the egg yolk and oil then brush onto the pastries.
17 Cook the pastries for 30 minutes at 200 in a pre-heated oven.
18 Slice the pastries, sprinkle finely chopped parsley and serve hot.
